Honoring the keenly anticipated Valentine's Day, La Maison Dalloyau Paris worked hard to please our great expectations, and went looking for inspiration in Japan.
In Japan, Valentine's Day is not only for lovers. As is the custom in Japan, on the 14th of February women treat the men of their families with chocolate to show their love and affection. One month later, on the 14th of March (also called "White Day") it is men's turn to treat the women they love and care about with gifts.
Starting from this lovely tradition, Dalloyau pastry-cooks conceived 2 heart shaped pieces of cake standing on a crunchy almonds core of puffed rice and praline. One piece is a soft delicacy: lemony white chocolate mousse, while the other is more intense and made of raspberry scented with ginger.
